gluten free for my girlfriend

Siobhan, my bestie, has celiacs disease, as does my new roomie, and a good amount of the human population. As a way to keep in touch and show my boo how much i love her, I bought this book with plans to bake her lovely treats and mail them off.



After a cry for cookies text, I baked a batch and sent them off. This recipe is not from the book, but rather the side of Pamela's gluten-free pancake and baking mix! I use the "chocolate chip cookie" recipe, but substitute peanut butter chips for chocolate, and i leave the nuts out. Ta-da!
